Hyderabadi Dum Biryani

You're either a 'hi der baddy' or a 'hi der dum dum' - time will tell

This is kacchi-style biryani: the chicken goes into the pot raw in its spicy yogurt marinade and cooks entirely in the steam of the rice above it. That means the rice level and the heat have to be spot on. Organise your spices first, then let the sealed pot do its magic.

The challenge

  • Marinating meat for hours
  • Parboiling rice to exact level
  • Layering rice and meat
  • Sealing pot with dough
  • Steam cooking temperature control

Hyderabadi layered rice dish where marinated meat and parboiled rice cook together in a sealed pot, steaming in their own aromatics until everything melds into fragrant perfection.

The pot gets sealed with dough around the lid to trap every bit of steam, then goes over low heat (traditionally with coals on top too) for the dum process. After 45 minutes of steam-cooking, you crack open the dough seal to reveal layers of golden rice, tender meat, and that elusive smell that's been torturing you.

Prep: 1 hour (plus 4 hours marinating) ย ยทย  Cook: 1 hour 15 minutes

Ingredients

For the marinade

  • 1.2 kg (2.6 lb) bone-in chicken pieces (thighs and drumsticks), skin removed
  • 250 g (1 cup) full-fat yogurt
  • 2 tbsp ginger-garlic paste
  • 2 tsp Kashmiri chilli powder and 1/2 tsp turmeric
  • 1 1/2 tsp garam masala and 1 1/2 tsp salt
  • 4 green chillies, slit, plus a handful each of mint and coriander (cilantro) leaves, chopped
  • Juice of 1 lemon
  • 3 large onions, thinly sliced and fried golden in 120 ml (1/2 cup) oil (keep the oil)

For the rice

  • 500 g (2 1/2 cups) aged basmati rice
  • 4 green cardamom pods, 4 cloves, 1 bay leaf, 1 small cinnamon stick and 1 tsp shahi jeera (caraway or cumin seeds)
  • 2 tbsp salt for the water

For layering and sealing

  • 1/2 tsp saffron threads soaked in 4 tbsp warm milk
  • 3 tbsp ghee, melted
  • 1 tsp rose water or kewra water (optional)
  • 150 g (1 1/4 cups) plain flour mixed with about 90 ml (6 tbsp) water to a firm dough

Method

  1. Fry the onionsFry the sliced onions in the oil over medium heat for 15-20 minutes, stirring often, until evenly deep golden and crisp. Lift out onto paper towels. Keep the flavoured oil.
  2. Marinate the chickenIn the pot you'll cook in (a heavy, wide pan with a tight lid), mix the chicken with the yogurt, ginger-garlic paste, chilli powder, turmeric, garam masala, salt, green chillies, half the herbs, lemon juice, 3 tbsp of the onion oil and two-thirds of the fried onions, crushed. Cover and marinate in the fridge for at least 4 hours, ideally overnight.
  3. Soak the riceRinse the rice gently until the water runs clear, then soak for 30 minutes. Take the chicken out of the fridge 30 minutes before cooking.
  4. Parboil the rice to 70%Bring 3 litres (12 cups) water to a rolling boil with the whole spices and 2 tbsp salt. It should taste like the sea. Add the drained rice and boil for 4-5 minutes, until a grain breaks into about three pieces when pressed and still has a firm white centre. Drain right away.
  5. Layer it upSpread the marinated chicken evenly in the pot. Spoon all the hot rice over the top in a loose, even layer without pressing. Scatter over the remaining herbs and fried onions, drizzle with the saffron milk, ghee, rose water and 2 tbsp of the onion oil.
  6. Seal with doughRoll the dough into a long rope and press it around the rim of the pot. Put the lid on and press down firmly so the dough seals all the way round. No steam should escape.
  7. High heat startCook on medium-high heat for 8-10 minutes, until you hear the marinade bubbling vigorously and smell the spices. This gets the chicken cooking.
  8. Dum on lowPlace a flat heavy pan or tawa under the pot, turn the heat to the lowest setting and cook for 35-40 minutes. Alternatively, move the sealed pot into an oven at 160ยฐC / 320ยฐF (140ยฐC fan) for 40 minutes. Don't peek.
  9. Rest and crack the sealTurn off the heat and rest for 10 minutes. Break the dough seal at the table for maximum drama. Check a piece of chicken is cooked through (no pink at the bone, 75ยฐC / 165ยฐF).
  10. Serve from the sideScoop down through the layers from the edge with a flat spoon so everyone gets white rice, saffron rice and chicken. Serve with raita.
  11. The dum revealBreak the dough seal in front of everyone and let the aroma knock them off their chairs. If they gasp, you're a hi der baddy. If they ask what the dough was for, you're a hi der dum dum. Either way, dinner is served.

Tips from the trenches

  • Use bone-in chicken no bigger than palm-sized pieces so it cooks through in the steam time.
  • Under-parboiled rice stays hard, over-parboiled turns to mush; check a grain every 30 seconds after 3 minutes.
  • A heat diffuser or tawa under the pot prevents the marinade from scorching during dum.
  • Lay everything out before you start; this biryani is all about having your spices and garnishes ready.
