Tahchin is a saffron-yogurt rice cake with juicy chicken hidden in the middle and a crackly golden crust all over. Most of the time is hands-off marinating and baking, so the real test is nerve. Use a non-stick pot or dish, trust the timings, and flip like you mean it.

The challenge

  • Achieving golden tahdig crust
  • Flipping without breaking
  • Parboiling rice precisely
  • Yogurt-saffron marination balance
  • Layering technique

Persian rice cake that's essentially an upside-down gamble where everything can go catastrophically wrong. Chicken marinates in yogurt, saffron, and spices for hours, while rice parboils to exact doneness. The goal is a golden, crispy bottom crust (tahdig) that forms while the rice steams and the chicken cooks through.

The flip is the moment of truth: you invert the entire pot onto a serving platter, praying the tahdig releases in one piece and reveals that prize-winning golden crust. Miss the timing or heat and you'll either have no crust, burnt crust, or watch the whole thing collapse into rice rubble when you flip it.

Prep: 45 minutes (plus 2-4 hours marinating) ย ยทย  Cook: 2 hours

Ingredients

For the chicken

  • 700 g (1.5 lb) boneless chicken thighs
  • 1 onion, quartered
  • 1/2 tsp ground turmeric
  • 1 tsp salt
  • 2 tbsp vegetable oil

For the rice and yogurt mix

  • 500 g (2 1/2 cups) basmati rice
  • 2 tbsp salt, for the cooking water
  • 1/2 tsp saffron threads, ground with a pinch of sugar and steeped in 4 tbsp hot water
  • 400 g (1 2/3 cups) full-fat Greek yogurt
  • 2 large egg yolks
  • 1 tsp salt
  • Finely grated zest of 1 orange
  • 80 g (1/3 cup) butter, melted, plus 2 tbsp oil

To garnish

  • 3 tbsp dried barberries (or chopped dried cranberries), soaked 10 minutes and drained
  • 1 tbsp sugar
  • 2 tbsp slivered pistachios
  • Seeds from 1/2 pomegranate

Method

  1. Poach the chickenPut the chicken, onion, turmeric and salt in a pan with water to just cover. Simmer gently for 25-30 minutes until tender. Cool, then shred into large pieces. Keep 120 ml (1/2 cup) of the cooking liquid.
  2. Wash and soak the riceRinse the rice in several changes of cold water until it runs almost clear, then soak in salted cold water for 1-2 hours. This gives long, separate grains that won't break.
  3. Make the saffron yogurtWhisk the yogurt, egg yolks, 1 tsp salt, orange zest and three-quarters of the saffron water together until smooth and bright yellow. Taste: it should be well seasoned and lightly tangy, not sour. Toss the shredded chicken with a third of this mix and 2 tbsp of the reserved stock, then cover and marinate in the fridge for 2-4 hours.
  4. Parboil the riceBring a large pot of water with 2 tbsp salt to a rolling boil. Drain the soaked rice and add it. Boil for 5-6 minutes, testing often: it's ready when the grain bends, the outside is soft but the centre still has a firm white core. Drain immediately and rinse briefly with lukewarm water to stop the cooking.
  5. Prep the dishHeat the oven to 200ยฐC / 400ยฐF (180ยฐC fan). Generously coat a 23-25 cm (9-10 in) non-stick ovenproof pot or deep glass baking dish with half the butter-oil mixture, covering the base and sides.
  6. Build the crust layerFold about half the rice into the remaining saffron yogurt. Spread a little more than half of this yellow rice over the bottom and up the sides of the dish, pressing firmly with the back of a spoon into an even layer about 2 cm (3/4 in) thick.
  7. Layer the fillingSpread the marinated chicken evenly over the rice, leaving a small border. Cover with the rest of the yellow rice, then top with the plain rice. Press down firmly all over so the cake holds together when flipped.
  8. BakeDrizzle over the remaining butter-oil and 2 tbsp stock. Cover tightly with buttered foil and a lid. Bake for 1 hour 30 minutes to 1 hour 45 minutes, until you can see a deep golden crust through a glass dish, or the edges pull away and look golden when you peek with a spatula.
  9. Rest before flippingLet the dish rest for 10 minutes. Set it on a damp tea towel for a couple of minutes; the steam helps release the crust. Run a thin spatula around the edge.
  10. The flipPut a large flat platter over the dish, hold both firmly with oven gloves, and flip in one confident move. Lift the dish off slowly. If any crust sticks, scrape it off and patch it back on; nobody needs to know.
  11. Garnish and serveWarm the barberries with the sugar and a knob of butter for 1 minute, then scatter over the top with the pistachios, pomegranate seeds and the last of the saffron water. Cut into wedges.
  12. The big flipHold the plate over the pot, take a deep breath, say a quick prayer and flip. If the crispy golden tahdig comes out in one piece, scream. If it doesn't, call it a 'deconstructed tahchin' and move on with your life.

Tips from the trenches

  • Check parboiled rice every 30 seconds after 4 minutes; too soft and the cake turns mushy, too firm and it won't bind.
  • A glass dish lets you see the colour of the crust, which takes the guesswork out of the timing.
  • Press each layer down firmly; loose layers are what crumble into rice rubble on the flip.
  • Keep the yogurt mix balanced: too much yogurt makes it heavy and wet, too little and the crust won't form.
